Caseificio turnario di Peio
The last turnario dairy in Trentino, in piazza San Giorgio.
In piazza San Giorgio, in Peio Paese, the last turnario dairy in Trentino is at work. Turnario means that the caserada, that is, everything produced in a single day, belongs to one member only, in turn, and that the turns go to each member in proportion to the milk he or she supplies. Inside there are the room with the three copper vats, the tanks where the cream rises to the surface, the brine bath, the store room and a counter for sales. The cheesemaker makes butter, cow's milk cheeses (the nostrano known as pegaés, the casolét, the tavièla, the formaggelle) and goat's milk cheeses. In summer the milk arrives from Malga Saline through a milk pipeline and from Malga Covel, where the goats are kept.
